What do they do? And why is it so bad to fiddle with them (by accident Hmm hmm)

They lock all the butterflys together. I have fiddled with mine, but I have some good carb balancing tools, loads of patience, and I had just renewed the rubbers under the throttles. It changed the bike for the better.
